mexi chicken bowl

  • chicken breast - slice into strips and cook in non-stick pan (no oil needed)

  • black beans - heat the can of beans in a pot for 5-10mins with spices like ground cumin and ground coriander, use about third of the can for your bowl

  • roast butternut pumpkin - cut into small cubes and cook in air fryer 15 minutes at 190.

  • hass avocado, half

  • fresh tomatoes, cut

  • half a corn on the cob - microwave cob for 3 mins and slice off kernels

  • lime to squeeze over top

Assemble in bowl! et voila.

I also like to add a tbsp of red pickled onion. Slice and soak a red onion in red wine vinegar - do the whole onion and keeps well in jar in the fridge.
